Within our food system, there is a great deal of waste. However, it is hard for small businesses to tackle this challenge alone.
Modeling our work after the Iceland Ocean Cluster, we are working to elevate the dollar value of every fish by looking at new products and income streams that could be generated from our seafood.
5-year Goal
As we work with new and growing businesses, we will spur the creation of 10 new products that utilize seafood by-products or processing “waste.”
Activities
In collaboration with the Iceland Ocean Cluster, identify fish utilization goals and models for capturing value creation.
Develop a roadmap and timeline for integrating recommendations into regional product development efforts.
Identify product development opportunities for small and mid-size businesses in the region.
Work with regional partners and businesses to develop and test products.
